Turkey Cobb Salad

Flavourful, filling and healthy? You don’t hear that together often. This salad (or meal?) is all of these things! It’s easy to make for your lunch or a crowd. It’s a lot less expensive to make at home (like most things) and a great way to use up vegetables, leftover turkey and bacon, all while getting excellent fiber, protein and the good fats.

I’m sure we are all familiar with the Cobb Salad, but did you know it became popular in the 1930s? Years and years of trial and error have produced a well rounded and beautiful looking salad. Perfect for a hot summer day! Versatile enough to use a combination of storebought and leftover ingredients, grab everything at your local farmers market, your garden or use what you’ve got on hand. The most satisfying part is – the dressing! Creamy yet light, with a little kick from the Dijon and vinegar. This is the ideal way to stay on track but also enjoy the good stuff and that is something we can get behind!

  • In a frying pan on medium-low heat, cook your bacon until crisp, about 3-5 minutes. Transfer to whatever paper-towel and plate situation you use for bacon and ditch the grease. Let this cool before you crumble it and add to the salad.
  • In a small bowl whisk together the vinegar, oil and dijon to make the dressing.
  • Place the shredded lettuce in a large bowl or on a serving platter and toss with small amounts of dressing at a time. Don't add the whole thing okay? Every salad is always different - Little bit's at a time make sure you don't have a soggy mess and it'll be just the way you like it!
  • Arrange the remaining ingredients on the lettuce as desired, and season with salt and pepper.

Notes

  • What's shredded lettuce? Discard the tough outer leaves and cut the head in half lengthwise. With the cut sides down, thinly slice the halves crosswise until you reach the core. (Use a lettuce knife so you don't get rust! Amazon Lettuce Knives)
  • Don't like blue cheese? Try feta!
  • Cherry tomatoes work great if you have some
  • Don't have turkey because it's not Thanksgiving or Christmas? That's okay, use chicken breast!
  • Add or substitute any vegetables you feel necessary, this is a piece together salad which takes the pressure off.
