Spicy Garlic Asian Cucumber Salad

A healthy cucumber salad bursting with Asian flavours. It's refreshing and easy to make. Normally cucumber doesn't have a lot of flavour on its own and it's not something I grab all the time. After discovering this recipe, cucumbers are something I want all the time. For a snack, a starter, lunch or a side dish these haven't disappointed any of us yet. Our recipe process will guarantee crunchy cucumbers every time - no one likes soggy cukes. This garlicky, spicy, tangy madness is everything you've been looking for in a cucumber salad. Ingredients
  • 1 large english cucumber (sliced)
  • 1 tbsp sugar
  • 1 tsp salt
  • Marinade
  • 3 tbsp garlic (minced)
  • 1 tbsp chili oil
  • 1 tsp sesame oil
  • 1 tsp red chili flakes
  • 1 tsp rice vinegar
  • 1 tsp sesame seeds
  • 1 tsp soy sauce
Instructions
  1. Wash and slice the cucumber, add to a large bowl and mix in sugar and salt. Set aside for 30 minutes and make your marinade. Letting the cucumber sit will pull out the access water giving you a nice crunchy salad.
  2. Add the marinade ingredients into a measuring cup and stir. After the 30 minutes are up, drain the access water and add the marinade. Mix well and enjoy!

  • Not into spice? Try this sweet and sour marinade:
    • 3 Tbsp of Rice Vinegar or Sushi Seasoning
    • 1 tsp of Sugar
    • 1 tsp of Salt
    • 1 tsp of Sesame Seeds
    • 1 Tbsp of Cilantro
