Ranch Roasted Nuts

SNACKS! I love snacks, but a healthy version is so hard to find. Do you ever look at the ingredients list on your pre-packaged goodies from the store? It’s a long mishmashed list of whatever. What I like about making snacks at home is control! (probably not surprising to some, or most?) I’m a baker and my husband is a serial snacker, so there I no shortage of mixed nuts in this house or nuts in general. This recipe is meant to help you reduce wasting the bottom of the bag. Take all the baking nuts, leftover natural almonds you thought you would eat and get baking!

This flavoursome snack is just salty enough to seem like a bag of chips but just healthy enough to make you feel good. I’m a huge fan of skipping the measuring spoon and adding what I like when it comes to mixing the seasoning. Try adding extra paprika for added spice or more dill because it’s delicious. I’ll let you in on another secret, reduce the oil a tablespoon or two and substitute it for buffalo wing sauce or honey. Trust me, it just makes this recipe more delicious. We aren’t fancy here, start substituting and stocking your cupboard with these bites of snack heaven!

  • Preheat your oven to 325F. In a large bowl add nuts and half of the oil. (Just eyeball it! It's a rough measure to make mixing easier)
  • In a smaller bowl, combine the spices. Sprinkled the mixed spices into your larger bowl and mix. Slowly add the rest of your oil and keep stirring. This helps you keep your oil and spice mix from turning into a soup mix, we can all be heavy-handed sometimes!
  • Place tinfoil on a cookie sheet and spread your nut mixture out evenly on the pan. Bake in a preheated oven for 20 mins, stirring every 5.
  • Cool completely before storing in an airtight container. Don't worry, you don't want to have for them to cool to eat - but they'll be hot!!
