Homemade French Onion Soup

Looking to warm up? When it comes to this decadent comfort food, it’ll soothe your soul and warm your heart. It’s rich but simple enough that you can tackle it on a weeknight, or prepare it on the weekend and throw it in the crockpot. With heaping spoonfuls of rich, delicious onions and melted cheese you’re going to think about this soup often. It’s healthy and flavorful all on its own. Who knew you didn’t need a cream sauce for a fancy soup? We did! Now you don’t have to go to Europe to have a taste of France, you can accomplish this tonight!

  • Slice the onions into shoestrings. They'll shrink a lot, so don't worry about making them too small.
  • Melt butter in a large dutch oven or heavy pot on medium-low heat. Make sure you let the butter bubble and start to brown, it'll make better-carmelized onions.
  • Add the onions, stirring occasionally as they cook. It could take up to 1 hour. If the pan dries out, add another tablespoon of butter or a tablespoon of white wine.
  • Once the onions are close to done, add the last of the white wine and increase the heat to medium-high. Add the beef broth, chicken broth, Worcestershire sauce, thyme and bay leaves. Simmer for 45 minutes, with the lid partially on.
  • While the broth is cooking, preheat the oven to 350 and slice the baguette and brush the tops with oil. Bake for 5 minutes, then turn the broiler on high and top each baguette with cheese. Once it's melted and bubbly, remove it from the oven.
  • Remove the bay leaves and thyme stems from the soup, season with salt and pepper if necessary. Ladle warm soup into each bowl and top with a cheesy baguette!

Notes

  • That's a lot of onions! You're right, they'll cook down though so it'll be okay. Use a mandoline slicer to speed things up.
  • Two types of onions? You don't have to use two, use what you have on hand. I don't think you'll be disappointed if you do though!
  • Gruyere cheese? Use Mozzarella, Swiss or even Provolone if that's what you have! Any cheese is good cheese but this is traditionally made with Gruyere and it's delicious.. so try it!
  • Crockpot? You can make this in the crockpot but the onions won't be as tasty. I recommend making it ahead of time and heating it up in the crockpot on high for 2-3 hour
