Gnocchi Spinach Parmesan

Creamy gnocchi, similar to an alfredo, a rich one-pot dish. I love this for weeknights because it can be done in under 30 minutes. You can add a protein of your choice, or leave it vegetarian. One thing I can guarantee is that it’ll be loved by everyone and cooked again and again.

It’s a great dish or both a main or a side. It’s really all up to you! The garlic and onion flavour that builds in the roux (that’s right, you’re going to make a kick-ass roux!) is next level. Don’t think the store-bought alfredo sauce is going to cut it with this recipe!

  • Cook the package of gnocchi according to the directions, drain and set it aside in a separate pan.
  • Return the empty pot to the stove and melt butter over medium heat. Add garlic and onion, saute for 1 minute or more until fragrant and translucent.
  • Add flour to the butter/garlic mixture and cook for 30 seconds or until bubbly. (Do not let this burn) Slowly add milk and whisk constantly to ensure there are no lumps. Cook for a few minutes until the sauce has begun to thicken.
  • Stir in the chopped spinach into the sauce and cook for an additional 3-4 minutes or until the spinach has wilted and the sauce is your desired thickness. Add salt and pepper to taste.
  • Remove the pot from the heat and add the parmesan cheese. Stir well until it is combined and smooth. Add the cooked gnocchi and stir to combine. Enjoy! This dish is best served right away, no one likes cold spinach!

Notes

  • Store-bought gnocchi? I haven't tried making it from scratch yet, one day!
  • No gnocchi? This is sauce is still delicious over pasta, rice, fish or chicken
  • No parmesan? This works great with white cheddar, asiago or even mozzarella if that's all you've got.
  • Dairy-free? Coconut milk or almond work as the recipe is forgiving. You'll have to eyeball the measurements though. If you do, comment on them below!
  • Fresh spinach? This will work with frozen, just ring out the liquid or substitute for parsley! If you find you have too much fresh spinach, throw it in a zip-lock and freeze it. They'll dry out and crack into a diced mixture for future use in easy recipes like this!
  • If your sauce is too thick, try adding more milk. If it's too thin, add more flour mixed in a tablespoon more of milk.
  • Toppings? We love extra pepper, parmesan or even walnuts or a great crunch!
