Flank Steak Tacos

Who doesn’t love tacos? I haven’t met one person who doesn’t, but maybe I pick my taco loving friends wisely. What more could you ask for? Delicious crispy corn tortillas, marinated steak grilled to perfection with a fresh punch of lime and a kick of heat from the jalapenos.

There’s just something about a grilled tortilla. These aren’t your ‘taco kit tacos’ or the kind your local fast food joint tries to pass off as satisfying. The only downside is wishing you were eating these on the beach, in the sunshine with a beer in hand. Go ahead, grab some Dos Equis, fire up the grill and give it a try!

    Marinating
  • Place the steak and minced garlic in a ziplock bag or a shallow baking dish. In a measuring cup, whisk together oil, lime juice, cumin, cajun, paprika and pepper. Add marinade to the ziplock bag and place it in the refrigerator for at least 30 minutes. (Let's not push this past 8 hours ladies and gents!)
  • Grilling
  • Remove the steak from the fridge while the grill heats up to approx 400F. Grill on medium-high heat for 5-7 minutes per side, you're looking for an internal temp of 130F-135F for medium-rare. Let the steak sit for 10 minutes before you slice it into strips.
  • Taco Assembly!
  • If you're feeling daring, clean off your grill and put the tortillas on. It won't take long and make sure you use tongs. Cook around 1 minute per side or less, depending on how crispy you want them. Keep them wrapped in foil or in a clay tortilla warmer until you're ready to eat.
  • To serve, place a few slices of steak in the tortilla. Add your desired toppings and serve immediately.

Notes

  • No flank steak? Skirt steak will work just fine!
  • No Cajun or smoked paprika? That's okay, use taco seasoning.
  • Can't find corn tortillas? Use flour instead. They won't be as authentic, but you'll survive!
  • Unsure where to cut? Go against the grain. If the pieces look too big for the taco, slice crosswise and then slice thinly for the tacos.
  • 4 Servings, how many tacos? This recipe should make about 8-10 tacos, it's your choice how many you tackle!
