Easy Focaccia Bread

This bread makes the perfect crispy noise when you tap it with a knife, but it’s so fluffy and soft inside. Thank you dough dimples – who knew right? I’ve always shied away from overnight bread, but I’ve been so wrong. It’s a lifesaver, the perfect recipe to procrastinate with or be productive when you don’t really have the time. Doesn’t that sound like a win-win? Before you run – this doesn’t take days. It’ll need a quick 5 minutes of your time to get it in the fridge – let it sit for 8-24 hours, pull it out 2 hours before lunch or dinner and BAM, homemade focaccia!

I had to start making these in double batches because I was almost eating the whole thing before I could share it with anyone. Want to surprise a friend? Get it started for them or drop it off warm from your oven. Now that’s how you build friendships with people who will help you move!

  • In a medium glass bowl, whisk together the flour, salt and yeast. Add the warm water and stir to form a soft sticky dough. Cover the bowl with plastic wrap and refrigerate for at least 8 hours. (Don't leave it longer than 24 hours, I haven't tested it and it just sounds like a bad idea guys!)
  • After the dough has chilled, gently shape the dough into a ball with your hands. Pour 1 tablespoon of olive oil into the bottom of an 8-inch cake pan and spread to cover the bottom. Place the ball of dough in the centre of the pan and cover it with plastic wrap. Make sure it's tight! Let sit at room temp for 2 hours or until the dough has nearly expanded to fill the cake pan.
  • Before the end fo your rise time, preheat the oven to 450F. Remove the plastic wrap from your pan. Pour 1⁄4 cup of olive oil over the dough, press your fingers down into the dough, all the way to the bottom of the pan. Repeat this process until the entire surface of the dough is covered in dimples. (Deep dimples catch more oil and seasoning - YUM!) Sprinkle the dough with oregano, basil and salt.
  • Bake in the preheated oven for 22-25 minutes or until golden brown and crisp.

Notes

  • Whats flaky salt? See that nice chunky salt? It's like a small party for your mouth. I used Maldon Crystal Smoked Sea Salt because, well why wouldn't you?
  • Want more flavour? Use sundried tomato, rosemary, fresh cracked pepper, shredded cheese, parmesan, onion, garlic or even dill!
