Dad’s Banana Bread

This delicious, chocolaty, nutty and sometimes coconut topped banana bread is one I’ve cherished for years. It’s like all my childhood dessert memories all in one bread. I fondly remember the sweet smell of sugar, butter and bananas all browning in the oven – patiently waiting for the heal piece with butter. The only part of the bread that you can cut the moment it’s ejected from the pan. It’s worth burning your fingertips for or better yet, having someone you love steal it for you. He never called himself a baker, but anyone who knows him knew he was a jack of all trades – even in the kitchen.

This guaranteed to be moist banana bread is easily turned into muffins or mini loaves. They won’t last long (unless you hide them for yourself – I like to use a decoy container technique) and will be a hit with even the pickiest non-banana lovers. This simple-type of recipe is just perfect enough to turn heads. She’s like the girl next door of banana breads – sweet, beautiful and talented. You’ll be kicking your ass while she ignores you for years if you underestimate her now. Stop putting your brown bananas in that awkward freezer graveyard and make this recipe!

  • Preheat your oven to 350°F, grease and flour your loaf pan.
  • In a large mixing bowl, cream together butter, sugar and eggs; add vanilla and beat until creamy.
  • Add bananas, flour and baking soda. Stir until just blended.
  • Pour into prepared pan and bake at 350° for 45-60 minutes. You’ll know it’s done when a skewer comes out of the middle clean.
  • Let the loaf cool 5-8 minutes before turning out onto a wire wrack to cool

Notes

  • Don't like chunks of banana? Whip it in the mixer it instead of mashing it
  • If you don't level your pan - you'll have really brown edges and a questionable center
  • Muffins and mini loaves take less time - use regular muffin wrappers or flour/grease your tins
  • Try lining your pan with parchment paper instead of grease/flour
  • You can bake this without chocolate chips, but why would you want to?
  • Try adding coconut, chopped nuts or different flavored chips to change things up
