Since I’ve met you, I haven’t spent one-second guessing. Who knew, all I had to do was add broccoli and cheese and I’d fall in love with rice all over again. Did your Mom ever make Rice-a-Roni? Who doesn’t love rice and noodles being sautéd in butter before they’re cooked in chicken broth? If I’m honest, my mom used to make plain white rice with chicken broth instead of water and that was pretty kick ass. But this isn’t about THAT rice. This is about the amazing ooey-gooey cheesy rice that you can call healthy because it’s got broccoli thrown in.
Don’t tell me you’re still eating minute rice with butter, we’re adults who deserve cheese now.

- Heat canola oil using a medium-sized saucepan, over medium heat. Add your onion and garlic and sauté for 2 minutes, stirring occasionally.
- Using your same pan, add the chicken broth and bring to a boil.
- Add the rice, cover and reduce the temperature to low, still stirring occasionally. Let the rice simmer for 12 minutes, remove the lid and stir well. ( If you find you are running out of liquid – maybe because you forgot to put the lid on? Just add a little more water. I told you this is no fail!)
- Add in two tablespoons of butter, 1/3 cup of milk, salt and pepper. Cover and let simmer for 3 more minutes.
- Next, stir in your broccoli. Continue to let everything cook on low for 4-5 minutes or until your broccoli is tender.
- Stir in cheese, don’t forget a little for the top! Serve and enjoy.
Notes
If you want this to be a real show stopper, after the cheese on top, add some breadcrumbs and put it under the broiler under crisp!
